Another fine dining restaurant has been added to the downtown restaurant scene, this one located in the Fairmont Hotel on Red River Street. I was just at the hotel last night for the 2018 Parade of Homes unveiling of the builders in Travisso and what an exciting hotel! This is a restaurant you’ll want to make time to experience!

Their menu is led by Andre Natera, Executive Chef and Jason Purcell, Chef de Cuisine with superior ingredients defined by one of a kind preparations. And, of course, all meals are meant to be paired with wines from their very impressive collection.
Here is a sampling of their menu …. From The Snack menu: Molasses Grilled Octopus – sunchoke chips, cured yoke and pimentόn or the Smoked Beef Tartare – puffed beef tendon with horseradish yogurt, crispy capers and pickled mustard seeds. From the Grill – there’s Niman Ranch Prime Porterhouse, 44 Farms Filet Mignon and Whole Grilled Branzino – all grilled over Texas Post Oak. On the Main menu there’s Windy Bar Ranch Beef Shank with almond mole, seasonal banchan and arepas…Grilled Prawns with fideos and Spanish chorizo and an Ember Roasted Lobster with heart of palm sweet corn humitas, dandelions and a Uni sauce. To round out the meal, don’t miss dessert! There’s Yuzu Pavlova with coconut sorbet, pandan jelly and yuzu curd … or try the Orange Grand Marnier Soufflé with bitter almond anglaise.
