It looks like rain this week-end but Italian is always good..right?Especially a pizzeria that calls itself a pizza bakery and follows the strict guidelines of the Associazione Verace Pizza Napoletana (VPN) to make authentic Neapolitan pizza. This is definitely one you want to check out.

Scott DeSano has a life mission of preserving the classic Italian traditions and recipes of his grandparents when it comes to making his pizza. At a young age, he decided he wanted to open his own pizzeria and in 2012 DeSano Pizza Bakery was born. At DeSano they use only the highest quality Italian ingredients that are flown in weekly from Napoli and Campania. The tomatoes are handpicked San Marzano tomatoes, the mozzarella cheese is crafted from the milk of water buffalos that live in the southern Italian countryside. They used Mediterranean sea salt that comes from the salt flats in Emilia Romagna that has a special sweetness perfect for pizza; the flour is exceptional Italian wheat flour that combines the finest grind with just the right amount of protein that produces the perfect crust. Combine all of this with extra virgin olive oil and fresh basil and you are in for a treat. Following VPN standards, the dough is gently kneaded in small batches and shaped by hand that gives each pizza its unique shape and texture. The pizza is then baked in their 3 world famous Acunto Grande Forni ovens that were handcrafted in Naples from Mount Vesuvius volcanic rock and ancient Santa Maria brick. At DeSano each oven is individually named after patron saints of Italy and blessed before the opening of each restaurant. This is one way they honor the Italian tradition of true Napoletana pizza. These ovens slightly char the crust, giving it a crisp and delicate outside but soft and chewy inside. A sample of what is on their pizza menu is the Capricciosa made with San Marzao tomato sauce, mushrooms, artichokes, prosciutto, garlic, scamorza, mozzarella di bufala and pecorina romano cheese. There’s also the Napoletana made with broccoli rabe, sausage, scamorza, mozzarella di bufala and pecorina romano cheese. And, for dessert, don’t forget to try one of their cannolis.
