The weather has been soo nice..89 degrees yesterday! Today temperatures in the low 80’s and we made it past Margarita Day! How about keeping in casual this week-end and revisit a great sandwich restaurant whose philosophy hasn’t changed: “Make it, and make it better than the guy down the street.”

I wrote about the Noble Sandwich Co. back in 2012 and thought it was time to check them out again since they’ve relocated down the road on Hwy 620 to a bigger and better location. Run by John Bates and Brandon Martinez, the philosophy behind Noble is based on culinary experiences that range from trattoria style to fine dining along with a passion for scratch cooking. On the weekends, the Noble Sandwich Co. is open for breakfast serving up waffles, oatmeal, sandwiches and stuffed biscuits like those with house-smoked bacon, house-made chorizo and eggs from local farms.
On the menu you’ll find sandwiches like the Smoked Duck Pastrami with Russian dressing and house-made rye pickles and The Cuban with ham, pulled pork, pickles, yellow mustard, mayo and swiss and their signature Noble Pig sandwich with spicy ham, pulled pork, provolone, spicy mustard, mayo and bacon. If you feel like a burger, try the Swine Burger with an all pork patty with provolone, crispy bacon, romaine, tomato, red onion and bacon aioli on a fresh baked spent grain bun or the Short Rib Burger – an all beef patty with blue cheese, smoked mushrooms, grilled onions, romaine, pickles and black pepper mayo on a spent grain bun.
