When it comes to dining out this week-end let’s think “Soul food.” No..not chicken fried steak, mash potatoes and gravy….let’s think “Soul food of Japan!” You probably think you know what ramen is. Read on and discover that it’s a lot more than those 10 cent packages of noodles that fill up a college student’s dorm. Give it a try..I think you will love it! Let’s hear those slurps!

Tatsu Aikawa, Executive Chef/Owner, was born in Tokyo, bred in Austin and spent most of his childhood in restaurants as a dishwasher, line cook, sushi chef to executive chef. Takuya Matsumoto, Executive Chef and Co-Owner is Austin born and bred. He is a graduate of Le Cordon Bleu and has also worked as a line cook, sushi chef and now executive chef. After receiving a phone call from Tatsu, the two embarked on their journey together of creating Austin’s first brick and mortar ramen shop. Tatsu’s brother, Shion, had a similar upbringing in Tokyo, traveled several continents before returning to Austin to help with the opening of Ramen Tatsu-ya.
Before giving some hints about what is on the menu, there are rules to eating Ramen…so here is your lesson in how to properly eat this tasty dish:
1. Chopsticks only (training chopsticks are available on request)
2. Sip the broth first, before digging into your noodles. Allow the steam to come up into your face and savor the aroma
3. Finish all the noodles before they get soggy!
4. Never share your ramen. Never!
5. Slurp! Do it loudly and shamelessly. This aerates the broth and enhances the flavor of the noodles, similar to wine
6. Add toppings after sampling the original flavors
7. If you’re still hungry after finishing your noodles, but, have some broth left you request more by saying “Kaedama please!” …. That means, Extra Noodles!
A sampling of what you’ll find on the Ramen menu is the Tonkotsu Original with pork bone broth, chashu, ajitama, woodear mushrooms and scallion. Another is the Tonkotsu Sho-Yu with pork bone broth, soy sauce blend, chashu, ajitama, menma, scallion, nori and pepper. On the Bomb menu there’s the Corn Bomb with butter & honey, the Fire in a Bowl with thai chili and habanero paste. There are Small Plates available like the Munchie Katsu Slider with a panko beef patty, Hawaiian roll and katsu sauce and the Hush Piggies with crispy chashu rillete, katsu sauce, bonito and pickled ginger.
