Cannon + Belle ~ "Foodie" Friday 1/27/17

I’ve got a fun place for you to try this week-end! Steeped in history this local restaurant will charm you and and the menu is …let’s just say…fulfilling our slogan “Let’s keep Austin weird!” You’ll need to make a trip down town to the Hilton  on East 4th Street but I will safely bet it will be worth the trip to enjoy this unique Texas flair restaurant! Before telling you about the restaurant, you need to know a little about Belle. In 1842, Governor Sam Houston ordered the removal of the Texas Republic archives. He wanted these secretly relocated from Austin to Washington-on-the-Brazos. Angelina Belle Eberly was a local legend in Austin.  She was afraid that symbols of the national government were being removed from the city.  So, she took it upon herself to fire a 6 pound cannon into the General Land Office Bldg.  It was that cannon fire that alerted the town to the theft and that conflict became known as the Texas Archive War.  

Thanks to Belle’s spirit, Austin was preserved as the Texas Capital and keeper of the archives.  Cannon + Belle named their restaurant after this event because they believe in taking risks like Belle did.  That is apparent in their menu that both preserves and challenges the Texas culinary customs.  Chef Peter Maffei is dedicated to serving the local and global community every day through inspired food, space and service. His menu captures the taste and feel of the city everyone here loves to call weird.  Some of what you’ll find on the menu: For appetizer – there’s the Oven Pretzel with pimento cheese, smoked bacon peanut butter & Dusseldorf mustard and the Roasted Brie with smoked apple and focaccia crostini.  On the Flour, Water, Yeast menu (aka Pizza): try The Bird with bacon wrapped quail, duck ham, caramelized onion, rosemary fontia, walnut parsley pesto, black garlic & duck egg…or The White with fresh mozzarella, pecorino romano, parmesan reggiano, spinach, cracked pepper and lemon zest. On the main menu there’s Seed Crusted Gulf Snapper with roasted okra, tomato consommé and romesco…Herb Crusted Venison with fennel, carrot, celeriac, juniper and Texas Tempranillo demi…the Marinated Texas Wagyu Ribeye with seasonal vegetable and chef’s starch.  

Top it all off with something from the dessert menu like their signature Bourbon + Bacon Bread Pudding infused with smoke bacon and served with bourbon crème or the Salted Chocolate Stack – a four layer chocolate cake with brown butter and salted caramel.
