Fukumoto is a Japanese izakaya that specializes in traditional sushi and yakitori. For those who may not know, an izakaya is a type of Japanese gastropub. It’s a down-to-earth casual atmosphere where the meal starts with drinks being ordered first and then you look over the menu. Drinks and food are generally ordered at a slower pace because it is believed that guests come to relax, eat and drink. Usually, one person starts the order over several courses and the meal is shared by everyone at the table. No eat and run at this restaurant!
Authentic yakitori is protein that is skewered and grilled over Japanese charcoal called binchotan that is made from branches of Japanese oak. A complex and unique flavor is created by this simple traditional Japanese method of cooking. And, lastly Edomae Sushi is an ancient and traditional style of Japanese cuisine that combines vinegared rice with another ingredient, typically raw fish. This method has been handed down for generations and focuses on tradition with an emphasis on the flavor of the main ingredient.
Owner Kazu Fukumoto was born in Japan and began his culinary career as a dishwasher working his way up to a Sushi Chef. Following that he spent 10 years as a Head Sushi Chef. He then spent time studying traditional yakitori at Hiroya Yakitori in Tokyo. In 2015 he opened Fukumoto where he loves to share his passion for food with everyone around him.
Some of what you’ll find on their menus….on the Sushi menu: Maguro or big eye tuna & Hamachi Toro or yellowtail belly…on the Yakitori menu: Tsukune or chicken meatball & Buta Bora or pork belly…and on the Traditional Rolls menu: Tekka or big eye tuna & Benitoro or salmon & scallions.
