In 1995 Jay Jerrier, the owner of Cane Rosso, visited Italy where he tasted his first true Italian pizza. Knowing he had tasted something special, he wanted to have that same experience in Dallas where he lived. He had a wood burning oven built and then trained with Master Pizzaiolos at the Associazone Verace Pizza Napoletana, (AVPN) where they promote and protect the true craft of Neapolitan style pizza. That training led to his first location of Cane Rosso in Dallas’ Deep Ellum district and eventually here in Austin. Cane Rosso adheres to the principles of the AVPN and serves authentic Neapolitan Pizza with always fresh in-house mozzarella and sauce made from crushed San Marzano tomatoes.
True Neapolitan style pizza is fired in their specially built 900 ° wood-fired oven for under 90 seconds and is meant to be eaten with a knife and fork. There is also a wonderful selection of fresh pasta made in-house along with salads, sandwiches and desserts. A sample of what is on their menu: For an appetizer try Angioletti – fried dough with parmigiano and marinara sauce. On the Vera Pizza Napoletana menu try the Capricciosa made with prosciutto cotto, mushrooms, artichokes, olives, san marzanos, housemade mozzarella and basil. Or you might like the Cane Russo made with local sausage, wood-roasted onions & peppers, san marzanos, housemade mozzarella and parmigiano.
A really tasty sandwich would be the Johnny C with coppa, prosciutto crudo, prosciutto cotto, hot soppresssata, grape tomatoes, provolone, parmigiano, giardiniera, arugula and balsamic vinegar. Of course, you have to have some dessert before you leave. Try the Bella Mela – vanilla bean mascarpone, cinnamon apples with sea salt caramel. Or, maybe a delicious serving of their Tiramisu.
