The Boiler Nine Bar & Grill used to be the Seaholm Power Plant here in Austin. The restaurant has 10,000 square feet spread over 3 levels with 3 open kitchens (one with a wood fire grill) where you can watch the chefs create their magic; and there’s a bar on every floor! The 3 levels are the restaurant on the main floor, the below ground cocktail lounge and a fresh air rooftop patio. The main dining and bar area focuses on dining centered on the grill. The majority of the items on the menu focus on different types of wood and the flavors that come from them enhancing meats, vegetables, seafood and more.
On the menu, you’ll find flame-kissed grilled brisket, roasted chicken and even charred squid. There are sharable and fun dishes like a melted cheese raclette or you can fancy it up and order caviar with potato chips. For the basement bar, you’ll find some wonderful concoctions where inspiration has been taken from cocktail books of the ’60s and ‘70s, where beverage director Jason Stevens found the technique of using coconut snow made with coconut oil and freeze dried coconut.
On the rooftop deck is where you’ll find the “fun” menu offering Frito pies, smoked brats, burgers and boiled peanuts. This deck comes equipped with an observation viewfinder to get a great view of the city.
