Vinaigrette’s is a salad bistro that raises the “salad bar” to new heights with delicious entrée salads. Before you dig into your salad, it’s important to note that there is a beautiful live oak tree that has been in this spot for more than 500 years. Owner Erin Wade immediately fell in love with the oak tree and the fertile soil in which it grows. Her restaurant brings this thriving live oak tree back into view for everyone to enjoy. Vinaigrette’s design keeps the buildings mid-century modern form and added bright colors, floor-to-ceiling windows that open onto a large, lush outdoor garden patio that surrounds that big oak tree. In fact, she bought 20 acres of that same Blackland region dirt in Bastrop for a farm to support the restaurant.
Sustainability is a priority to Erin. Food from her restaurant returns to the farm to feed the animals and for composting to feed the healthy soil to grow fresh produce. Vinaigrette’s emphasis is on taking the world’s healthiest meal, a well-balanced salad and making it taste delicious with fresh, bold and innovative flavors. There are also deliciously prepared proteins to accompany your salad such as diver scallops, duck confit, grilled hangar steak, lemon herb chicken and plancha-seared trout. Erin feels the bonus is that when you eat such a delicious and nutritious salad for lunch or dinner, it’s ok to enjoy a side of fries or treat yourself to some homemade carrot cake. That’s why soups, sandwiches, savory sides and decadent desserts are also available.
