Emmer and Rye ~ "Foodie" Friday 3/18/16

Do you sometimes like to go out and just chill?  No rush, just sit back and enjoy the meal?  How about where the menu depends on what the farmers have available that day?  Then, I have just the place for you!

Emmer and Rye focuses on seasonally inspired and local cuisine and the menu changes on a daily basis.  Heritage grains for pastas, desserts and breads are milled at this restaurant.  To maximize the local ingredients, they have an in-house fermentation program.  That allows them to grab flavors at their peak and preserve for the off season.   There are 2 ways to dine at Emmer and Rye – you can eat off the menu and choose from small plates, pastas, larger plates and desserts.  Or, order off the dim sum carts that circulate the room with nightly specials that are described tableside.  Serving that way allows them to support their community of producers, farmers and ranchers; and because the menu changes daily they are able to highlight what the farmers are most excited about!  As far as their name goes – Emmer wheat was one of the first domesticated crops with an earthy, slightly spicy flavor and a smell that will remind you of mushrooms.  They chose the name Emmer as a tribute to ingredients that are sometimes overlooked.   The chef had a wonderful opportunity to spend time in Copenhagen, Denmark, which now influences his view on food.  When you think of Scandinavia, a lot of people often think of rye bread – so Rye joined Emmer and the name was now complete.  Their menu has 19 dishes on it that are divided into snacks, first, second, cheeses and dessert.  One interesting item is on the dessert menu called “Sunchoke Custard with seaweed, crispy onions and brown butter”.  It’s served in a pottery bowl with flower petals on top of a light, golden pudding made of Jerusalem artichoke softened with eggs & milk with fried shallots and a buttery crumble on top.  Not only tastes good, it’s pretty to look at.
